Ingredients:
For the pastry:
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 9 tablespoons unsalted butter, cold and cut into small pieces
- 1 large egg yolk
For the filling:
- 3-4 ripe pears
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons unsalted butter, melted
For the glaze:
- 1/4 cup apricot jam
- 2 tablespoons water
Instructions:
- Make the pastry: In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse crumbs. Add the egg yolk and pulse until the dough comes together. Press the dough into a disk, wrap in plastic, and chill for at least 30 minutes.
- Preheat your oven to 375 degrees F (190 degrees C).
- Prepare the pears: Peel the pears and cut them in half. Remove the cores, and slice the pears thinly.
- Roll out the dough to fit a 9 or 10-inch tart pan. Press the dough into the pan and trim any excess.
- Arrange the pear slices on the tart dough. Sprinkle the sugar, cinnamon, and nutmeg over the pears, and then drizzle with the melted butter.
- Bake for 30-40 minutes, or until the crust is golden and the pears are tender.
- Make the glaze: In a small saucepan, heat the apricot jam and water until it becomes liquid, then strain to remove any fruit pieces. Brush this glaze over the hot tart.
- Let the tart cool before slicing and serving.
